  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 8 oz cream cheese
  • ½ cup powdered sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, sugars, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour half of the batter into a greased springform pan.
  6. In a separate bowl, beat cream cheese, powdered sugar, and lemon juice until smooth. Spread over the first layer of batter.
  7. Top with the remaining carrot cake batter.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before removing from the pan.
  10. Serve chilled or at room temperature.

Notes

  • For added flavor, consider adding walnuts or raisins to the batter.
  • This cheesecake can be made a day in advance for better flavor.
