Carrot and Celery Root Soup

Ingredients

  • 2 cups celery root, peeled and diced
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme

Instructions

  1. Heat olive oil in a pot over medium heat. Add onions and sauté until translucent.
  2. Add carrots and celery root, stirring for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Add thyme, salt, and pepper.
  4. Reduce heat and let it simmer until the veggies are tender, about 20 minutes.
