Caramel Apple Cheesecake Bars

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups peeled and diced apples
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9×13 inch baking dish.
  3. In a large bowl, blend the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in the diced apples, then pour the mixture over the crust in the baking dish.
  5. Bake for 30-35 minutes until the cheesecake is set but still slightly jiggly in the center.
  6. Remove from the oven and drizzle the caramel sauce on top. Allow to cool before serving.
