Cajun Potato Soup

A comforting and delicious Cajun potato soup made with turkey bacon and chicken ham.

Ingredients

  • 4 large potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Add onion and garlic, cooking until translucent.
  4. Stir in diced chicken ham and cook for a few minutes.
  5. Add diced potatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Stir in heavy cream and cook for an additional 5 minutes.
  8. Serve hot, garnished with extra turkey bacon if desired.

Notes

  • This soup can be made in advance and stored for later.
