- 1 pound chicken thighs, diced
- 1 pound shrimp, peeled and deveined
- 1 pound andouille sausage, sliced
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups long-grain rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 1 tablespoon olive oil
- 1 tablespoon parsley, chopped
- In a large pot, heat olive oil over medium heat and sauté the chicken until browned.
- Add sausage, onion, bell pepper, celery, and garlic; cook until vegetables are tender.
- Stir in rice and Cajun seasoning, then add broth, thyme, black pepper, cayenne, and bay leaf.
- Bring to a boil, cover, and reduce heat to low; simmer for 20 minutes.
- Add shrimp, cover, and cook for an additional 5 minutes or until shrimp are cooked through.
- Remove bay leaf and stir in parsley before serving.
