  • 1 pound shrimp, peeled and deveined
  • 1 pound turkey bacon, chopped
  • 2 cups long-grain rice
  • 1 large onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion, bell pepper, celery, and garlic; sauté until softened.
  4. Add the Cajun seasoning, rice, chicken broth, salt, and pepper; bring to a boil.
  5. Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
  6. Stir in the shrimp and cook for an additional 5 minutes.
  7. Serve hot, garnished with parsley if desired.
