  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons butter
  • 10 leaves fresh sage

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced butternut squash with olive oil, salt, pepper, and nutmeg. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  4. In a skillet, melt the butter over medium heat. Add the sage leaves and cook until crispy.
  5. Combine the roasted butternut squash with the cooked pasta and crispy sage. Toss with grated parmesan cheese before serving.
