Brown Butter Sage Butternut Squash Pasta

A deliciously warm pasta dish featuring brown butter, sage, and butternut squash.

  • 1 pound butternut squash, peeled and cubed
  • 8 ounces pasta of choice
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper, then roast for 25-30 minutes.
  2. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  3. In a sauté pan, melt the butter over medium heat and add the sage leaves. Cook until the butter is browned and the sage is crispy.
  4. Combine the roasted butternut squash and pasta in the sauté pan with the brown butter sauce. Toss to combine.
  5. Serve warm, garnished with grated Parmesan cheese.

Notes

  • For a vegan version, substitute butter with olive oil and omit cheese.
