  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter
  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Add the milk and mix until smooth.
  8. Fold in the mixed berries gently.
  9. Pour the batter into greased cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  10. While the cake cools, whip the heavy cream with powdered sugar until soft peaks form.
  11. Once the cake is cool, assemble by layering whipped cream and more berries between the cake layers.
  12. Top with remaining whipped cream and berries before serving.
