Beet Salad

A refreshing and colorful beet salad featuring crispy turkey bacon and a zesty vinaigrette.

Ingredients

  • 3 medium beets
  • 4 slices turkey bacon
  • 4 cups mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap the beets in foil and roast them for about 45-60 minutes until tender.
  3. While the beets are roasting, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  4. Once the beets are cool, peel and slice them.
  5. In a large bowl, combine the mixed greens, sliced beets, turkey bacon, feta cheese, and walnuts.
  6. Drizzle balsamic vinaigrette over the salad and toss gently to combine.
  7. Serve immediately.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Roasting beets can be done ahead of time for convenience.
