  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the onions and garlic, sauté until onions are translucent.
  3. Stir in the tomato paste, beef broth, carrots, potatoes, thyme, and bay leaves.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
  5. Season with salt and pepper before serving.

Notes

  • For a thicker stew, whisk in a cornstarch slurry during the last 30 minutes of cooking.
