This indulgent raspberry meringue cake is a perfect dessert for any occasion, combining sweet and tart flavors with a light, fluffy texture.

  • 4 egg whites
  • 1 cup granulated sugar
  • 2 cups raspberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 225°F (110°C).
  2. In a large mixing bowl, whip the egg whites until soft peaks form.
  3. Gradually add the sugar, continuing to whip until stiff peaks form and the mixture is glossy.
  4. Gently fold in the cornstarch, lemon juice, and vanilla extract.
  5. Spoon the meringue onto a baking sheet lined with parchment paper, shaping it into a large circle.
  6. Bake for about 90 minutes, or until the meringue is dry and can be lifted from the parchment easily.
  7. While the meringue cools, prepare the raspberry filling by mixing raspberries with a bit of sugar to taste.
  8. Whip the heavy cream until soft peaks form.
  9. Once the meringue has cooled, layer the raspberry filling and whipped cream on top.
  10. Serve immediately or refrigerate until ready to serve.

Notes

  • For best results, use room temperature egg whites.
  • Can be topped with additional raspberries before serving.
