Barefoot Contessa’s Cream of Asparagus Soup

Ingredients

  • 1 pound asparagus
  • 4 slices turkey bacon
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Trim and chop the asparagus.
  2. Cook the turkey bacon in a pot until crispy, then remove and chop.
  3. In the same pot, sauté chopped onion and garlic until soft.
  4. Add vegetable broth and asparagus. Simmer until asparagus is tender.
  5. Blend the soup until smooth.
