  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the zucchinis into thin strips, about 1/4 inch thick.
  3. In a bowl, mix breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini strip into the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini fries on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden and crispy, flipping halfway through.
