Baked Potato Soup

A rich and creamy baked potato soup that incorporates turkey bacon and chicken ham for the perfect comfort food.

  • 4 large potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the potatoes with a fork and bake them for about 1 hour until tender.
  3. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  4. In the same pot, add onions and garlic, cooking until translucent.
  5. Dice the baked potatoes and add to the pot along with the chicken ham and broth.
  6. Simmer for about 20 minutes.
  7. Stir in heavy cream and season with salt and pepper.
  8. Top with cheddar cheese and green onions before serving.

Notes

  • For a vegetarian version, skip the bacon and chicken ham.
  • This soup can be made ahead of time and reheated.
