1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
3 large eggs
3 cups peeled, diced apples
1/2 cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Fold in the apples and walnuts, if using.
Pour the batter into the prepared pan and smooth the top.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let cool before icing.
To prepare the icing, whisk together powdered sugar, brown sugar, milk, and vanilla until smooth, then spread over the cooled cake.
