  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup Andes Mints, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined.
  5. Fold in the chopped Andes Mints.
  6. Pour batter into prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Allow the cakes to cool before frosting.

Notes

  • For an extra minty flavor, add mint extract to the frosting.
