  • 4 medium russet potatoes
  • 1 cup shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then rub them with olive oil and sprinkle with salt.
  3. Place the potatoes in the air fryer basket and cook for 35-40 minutes or until tender.
  4. Cut the potatoes in half lengthwise and scoop out the insides into a bowl.
  5. Add cooked chicken, buffalo sauce, cream cheese, cheddar cheese, and green onions to the bowl. Mix until well combined.
  6. Stuff the potato skins with the mixture and place them back in the air fryer.
  7. Cook for an additional 10-15 minutes until heated through and the tops are slightly crispy.
  8. Serve warm and enjoy!
